Reese's Cupcake with Peanut Butter Frosting

Say hello to my little peanut buttery , creamy and ever so rich and delicious friend "The Peanut Butter Cupcake". I am officially hooked on this peanut butter frosting. I really had to keep my fingers out of the bowl so that there would be enough left to frost the cupcakes!

Reese's Cupcake with Peanut Butter Frosting

Ingredients:
1 Box Duncan Hines Butter Fudge cake mix
1 small box cook and Serve Chocolate Pudding mix(not instant)
1 envelope Dream whip
4 large eggs
1/4 cup vegetable oil
1 cup water
Directions:
Preheat oven to 325. Grease and flour 2 9" cake pans
Place cake mix, dream whip, and pudding mix into large bowl and mix together.
Add eggs, water and oil and mix on high for 4 minutes with an electric mixer, scraping down the sides of the bowl if needed.
Pour into cupcake liners and fill 1/2 to 3/4 full.
Bake for 15- 18 minutes or until toothpick comes out clean.
Remove cupcakes and cool completely on racks.

Frosting:
1 cup confectioners sugar
1 cup creamy peanut butter
5 TBL unsalted butter, at room temp.
3/4 tsp vanilla
1/4 tsp salt
1/3 cup heavy cream
1 package mini Reese's cups

Directions:
Place confectioners sugar, peanut butter, vanilla and salt in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium-low speed until creamy, scraping down the bowl with a rubber spatula as you work. Add the cream and beat on high until the mixture is light and smooth. Frost away! Sprinkle with mini Resses cups and enjoy.

I made these cupcakes, although I didn't use mini reese's as toppers and chose a different boxed cake mix, for a project I'm doing called: One Week Resolutions. I gave you credit on the post but I just wanted to say that these were divine! I literally didn't get to even taste one they were gone so quickly. Thanks!
